I love avocados!
Never had one until about three years ago. But now have to have the avocado fruit in some form every day.
For those who stay away from nightshades - tomatoes in particular, it may be challenging to find a topping for pasta. Especially when we are so used to having that on pasta or on pizzas.
A simple recipe to try in place of tomato sauce or pizza sauce could be an avocado topping instead.
Recipe
Ingredients:
One whole avocado - ripe
1/4 tsp sea salt
1/4 tsp garlic powder
2 tablespoons of water
Directions: Mash avocado. Stir until blended. Add water, salt, garlic, mix well. Put on top of pasta. Heat pasta in microwave for two minutes.
Enjoy.
I used spaghetti squash instead of pasta. Still very tasty.
