This is not the music group black eyed peas information
This is a blog featuring a recipe called Red Red that has black eyed peas in it. The name Red Red comes from the original African recipe ingredients of red kidney beans, red tomatoes, and red denude oil. This recipe from Old ways only has the tomatoes in it and not the other ingredients.
The great things about this recipe is it is:
high in protein and fiber
rich in vitamins folate and iron, and high levels of potassium
These can help to lower blood pressure, and reduce the risk of stroke
Another benefit for eating black eyed peas
The other benefit of including beans and black eyed peas - which are a bean - help your gut bacteria produce compounds called short chain fatty acids.
Short chain fatty acids have health benefits such as fighting cancer and decreasing inflammation in the body.

Black-eyed peas and Okra Stew (Red Red)

Prep Time: 30 minutes Yield: 10 Side Servings
Ingredients
1 medium onion
2 tablespoons extra-virgin olive oil
1 to 2 teaspoons fresh grated ginger (more to taste, we like a lot!)
1 clove of garlic
¼ teaspoon or more cayenne or Berbere spice
1 large can of crushed tomatoes
2 (15-ounce) cans black-eyed peas, drained
8 ounce of cut, frozen okra, thawed
Salt
Instructions
Slice the onion thinly and fry in the oil until it softens. Add ginger, garlic, and cayenne, and fry the spices for 1 minute. Don’t burn the ginger.
Add the tomatoes (with all juices), black-eyed peas, and okra. Bring to a simmer and let it cook until the okra is nice and soft. Add salt until it tastes right.
Serve with fried bananas or plantains. Or rice. Or anything.
