This soup is really simple to make and has a wonderful flavor.


The first time I made this soup, the kale was not cooked all the way.


The trick is to put the kale in first and cook it by itself until it is tender. then you add the other ingredients.


Portuguese sausage and kale soup


Ingredients:

  • 2 tablespoons (2 turns around the pan) extra-virgin olive oil

  • 1 package green giant butternut squash - frozen 8 oz

  • 1 medium onions, chopped

  • 2 cloves garlic, chopped

  • 3 bay leaves, fresh or dried

  • 12 oz kale coarsely chopped

  • Coarse salt and pepper

  • 2 (15-ounce) cannellini beans

  • 1 can black beans 15 ounce

  • 2 can diced tomatoes 2 15 ounce

  • 1 package of frozen carrots 12 oz

  • 1 pound diced sausage (variation for vegetarians - 1 package Morning Star sausage original flavor

  • 1 quart chicken broth


Directions:

  1. Heat oil in a deep pot over medium high heat. Add butternut squash and onions, cover and cook 5 minutes, stirring occasionally.

  2. If using sausage, place sausages in a pre-heated skillet over medium heat, turning them often. Takes about 8 to 10 minutes to cook. Thawed sausages only take 5-6 minutes.

  3. Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, sausage, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until squash and carrots are tender.

For those that are following the Leap diet, Applegate Naturels Classic Pork Sausage is casin free, dairy free, and gluten free. Ingredients - Pork, Water. Contains Less Than 2% Of The Following: Cane Sugar, Salt, Spices. The spices are sage, black pepper, white pepper, red pepper, ginger


For a person who is just starting the Leap diet, the recipe would have to be modified based on your individual profile. Also cannellini beans and black beans are untested, which means another bean would be used instead - based on your profile and needs.


Sometimes there is a lot of confusion about the immune system.



What does it have to do with me? Is it something that would help me?


If you think you have a food sensitivity, then you need to know more. You might notice symptoms like having a migraine or a headache after you eat a certain food. Or perhaps you get the headaches/migraines and can't link it to a food at all.


Maybe you have bloating, or have to make a mad dash to the bathroom after eating. Can't put your finger on what is causing the stomach pain, gas, bloating, and loose stools.


A client shared she knew where every bathroom in Dayton was because she never knew when she would have to be very close to one. That she could not figure out what was causing the stomach issues.
