Try it Tuesday - Almond cookies - Gluten free

I am not usually someone who needs a sweet at a meal. Yet, if you did want a sweet treat, these are very easy to make.

These cookies almost looked to simple to be good. But they were good. :)

Easy Almond Cookies

prep: 10 mins

cook: 25 mins

total: 1 hr 35 mins

additional: 1 hr

Servings: 9

Yield: 9 cookies

  • 1 egg white - room temperature

  • 1/3 cup cane sugar

  • 1/2 teaspoon vanilla pure vanilla extract

  • 1/2 cup almond flour

  • 1 Tablespoon silvered almonds, chopped - full almonds

  1. Preheat oven to 300 degrees F (150 degrees C). Line 8x8-inch baking dish with parchment paper.

  2. Whisk egg white, cane sugar, and vanilla extract together in a bowl. Fold almond flour into egg mixture until just combined; spread batter into baking dish. Sprinkle almonds over top of batter and press down lightly.

  3. Bake in preheated oven until golden brown, about 25 minutes. Transfer cookies to a cooling rack using the parchment to lift it out of baking dish. Cool to room temperature, about 1 hour.

A couple of the original recipe were changed. Used cane sugar instead of the coconut sugar specified in the recipe. Changed the almond extract to pure vanilla extract. Substituted the silvered almonds - used one whole almond in the middle.

Added some vegan diary free chocolate chips to three of the cookies for a different taste. Chocolate can be an important addition.

The small details are important. It is not just the big moments.

"Before working with Juanita, I had constant and excessive diarrhea. Because of this, I could barely leave the house. Now all of that is gone and I feel better. Before I also had a lot of pain with my muscles and joints. That is significantly better. Juanita has helped me step by step on my diet. She has been a great help through this process. I can now comfortably leave the house without worrying about where a bathroom is. I can also get down on the floor and play with my grandchildren. Three benefits to working with Juanita and doing Leap/MRT are:   I can get down on the floor and play with my grandchildren. I can go out of the house more. I eat a lot better and drink a lot more water. I would recommend Juanita. She is the best. I've had a wonderful experience working with Juanita. She is very knowledgeable about this diet. and has answered all of my questions." Cindy C.

Being able to get down on the floor to play with her grandchildren, that is a small thing, but it builds the relationships, it connects the family, and it makes memories that last a lifetime. It is all in the small details.

What do you want to have? What is a detail that is missing from your life that if you were feeling better you would do or have?

Let's chat on the phone to find out what your small details are.
