Try it Tuesday - Almond cookies - Gluten free


I am not usually someone who needs a sweet at a meal. Yet, if you did want a sweet treat, these are very easy to make.


These cookies almost looked to simple to be good. But they were good. :)



Easy Almond Cookies

Yield: 9 cookies


Ingredients:

  • 1 egg white - room temperature

  • 1/3 cup cane sugar

  • 1/2 teaspoon vanilla pure vanilla extract

  • 1/2 cup almond flour

  • 1 Tablespoon silvered almonds, chopped - full almonds

Directions:

  1. Preheat oven to 300 degrees F (150 degrees C). Line 8x8-inch baking dish with parchment paper.

  2. Whisk egg white, cane sugar, and vanilla extract together in a bowl. Fold almond flour into egg mixture until just combined; spread batter into baking dish. Sprinkle almonds over top of batter and press down lightly.

  3. Bake in preheated oven until golden brown, about 25 minutes. Transfer cookies to a cooling rack using the parchment to lift it out of baking dish. Cool to room temperature, about 1 hour.

67 calories; 3.8 g total fat; 0 mg cholesterol; 8 mg sodium. 6.9 g carbohydrates; 2 g protein;


A couple of the original recipe were changed. Used cane sugar instead of the coconut sugar specified in the recipe. Changed the almond extract to pure vanilla extract. Substituted the silvered almonds - used one whole almond in the middle.


Added some vegan diary free chocolate chips to three of the cookies for a different taste. Chocolate can be an important addition.
