Try it Tuesday - Cranberry Hummus

Hummus is a dip, spread, or a savory dish made from chickpeas or garbanzo beans. Typically it is made from the garbanzo beans blended with tahini, lemon juice, and garlic.


Up until now, my favorite hummus has been a hummus made with red peppers. That was until I tried this recipe that is hummus with a twist.


I made hummus that is different than the traditional approach. Cranberry hummus.



Cranberry hummus Prep time:  10 mins Total time:  10 mins Serves: 4 Ingredients

  • 1 can (19oz) chickpeas, drained

  • 1 cup frozen cranberries, thawed (you can use fresh too)

  • 3 Tbsp hot water

  • 1 Tbsp olive oil

  • 2 Tbsp fresh squeezed lemon juice

  • ½ tsp cumin

  • ¼ tsp nutmeg

Directions

  1. In a food processor mix all of your ingredients together till well blended, about 2 minutes.

  2. Spoon hummus into a serving bowl, top with some whole cranberries, and a pinch of both dried parsley and paprika, optional to top with a little drizzle of olive oil.
