1 way to use up that zucchini - fast, healthy, and fun to make


Quick, easy, and healthy recipe - a cool look

I am always on the lookout for a quick, easy, and healthy recipe. Thanks to my nephew Ed who lives in New York for posting this one on FaceBook.

It also demonstrates an easy and beautiful way to present vegetables and other foods in recipes.

I think I am behind the times. I had not seen or heard of spiralizing vegetables until he posted the recipe.

Well, at least for now, I am caught up and have put together a video to show you the ease making it.

Tip to make it easy for clean-up

One thing different from the recipe, I used a ziploc bag - quart size to 'mix' my ingredients. I find this much easier than trying mix some ingredients in a bowl.

The recipe

Zucchini Noodle Salad with Bacon & Tomatoes

This cold zucchini noodle salad recipe is a delicious, healthy way to enjoy raw spiralized zucchini noodles. Quick & easy with common ingredients!

Ingredients

  • 3 tbsp Olive oil

  • 1/2 tbsp Lemon juice

  • 1/4 tsp Garlic powder

  • 1/4 tsp Sea salt

  • 1/8 tsp Black pepper

  • 3 medium Zucchini (spiralized)

  • 6 slices Bacon (cooked, cut into small pieces or crumbled)

  • 1 1/2 cup Grape tomatoes (halved)

  • 1/4 cup Fresh basil (cut into ribbons)

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, sea salt, and black pepper, until emulsified.

  2. In a large bowl, combine the spiralized zucchini, chopped bacon, halved grape tomatoes, and fresh basil. Toss with the dressing. Serve immediately.
