Make it Thursday - Easy Peasy Crust Less Quiche
I really like recipes that can be adapted or changed.
The other quality of a recipe I like is if it is really easy to make and also a fast fix.
Easy Peasy Crust Less Quiche
Prep time: 15 minutes
Cook time: 35 minutes
Yield 16 servings
12 oz of frozen vegetables - choose your variety
1/2 cup chopped onions
1 cup mozzarella cheese
Preheat oven to 400 degrees F.
Put parchment paper inside two pie pans. Paper needs to be bigger than the pie pans.
Place frozen vegetables in microwave and cook according to directions.
Mix eggs, onions, vegetables, and cheese together in a bowl.
Pour 1/2 of mixture into each pie pan.
Bake the two pans on the middle rack for 30 to 35 minutes until the quiche is cooked throughout.
How to make this an easy peasy crust less quiche dish.
Any type of vegetables can be used in the quiche.
If the dish is for someone on the Leap diet, omit the cheese and use allowed vegetables and other ingredients.
Quiche can be cut and frozen. Then microwaved for a quick meal.
Quiche could be used in sandwiches or wraps. I added salsa and spinach leaves to a wrap for a tasty quick meal.
