Fast not fussy meals - Cabbage Kale Lentil soup


I found a bargain the other day when shopping in the store. It was a head of cabbage for 75 cents! Wow!

Small problem. I have never cooked cabbage before. I didn't let that stop me. I love a challenge. Came up with a new recipe for the ingredients. Also was thinking this way of cooking is fast not fussy (staying in the kitchen for hours to make a meal).

I think this is a fabulous recipe and look forward to your feedback.

Especially want to know what my brother thinks (maybe his wife will make this for him). He laughed at me when I shared my new recipe with him when talking to him on our weekly Skype call.

The ingredients are good for the heart and after eating a bowl, is very filling and satisfying. So, Joe, this one is for you. Laura, make sure he eats the whole bowl when you make it. :)

Cabbage Kale Lentil soup

Ingredients

4 cup Chicken Broth

2 cup, chopped Cabbage, fresh

1.5 cup, chopped Carrots, raw

1 cup, diced Celery, raw

4 clove Garlic

1.5 cup diced Potato, raw

4 cup Water

1.5 cup Lentils

1 tbsp Extra Virgin Olive Oil

0.5 cup Del Monte Diced Tomatos

1.5 cup - chopped kale, fresh

Put all ingredients into crock pot.

Chop everything as if you are making a vegetable soup.

Cook in crock pot for 4 hours.

Serving Size: 1 cup
